I somehow bumbled my way through content, and have found myself in a Mythic guild. Now that I'm raiding somewhat more seriously, I would really like to improve my game.
In addition to the basics like counting the number of Evocations, AP/PC casts on a fight, how else can I evaluate my own logs?

As arcane its important also to check the mana curve and arcane charges. Pick a few fights and compare with top performing mages to see these are somewhat similar. since you clear charges under 93% mana the main thing is to keep it around there and then up to almost full while stacking charges again. Then of course dips down to around 50% when going in burn phase. For charges its good to be able to manage to keep 4 stacks as much as possible and not stay at less stacks for too long. You stay longer at 4 stacks by using missiles procs and supernova while waiting for mana to go up again.
Another thing you can check is that your cds are used as much stacked as possible. For example leg ring, time warp, arcane power, crystal and both potions:)

When I evaluate logs of potential trials I look at
Arcane:
mana curve
AM proccs vs uses
opener
talent choices for specific bosses
Frost:
FB/ FoF proccs vs uses
WF uses per fight length
general:
prio target damage / deaths
